Got a request today. So I gotta post. I was on the way home from the grocery store and got asked what I had to eat. Low and behold they asked for the recipe. Here goes: For the cook in your kitchen who may be able to make out my jumps in thought and technique:
Tomato Corn Soup
1-2.5lb fryer or chicken parts preferably dark meat
1 28 oz can of crushed tomatoes or use 1 lb.fresh: blanch, deskin, chop and cook down
2-3 ears of corn shucked, cleaned and shaved off the core. Set aside
2 cloves garlic chopped
1 medium onion chopped fine
1 Tablespoon of chili powder or 3 Serrano peppers
1 teaspoon of sea salt to start, you may want more
Place the chicken in a large pot and cover over with water at least two inches. Add salt. Boil for one to two hours or at least till the meat is falling off of the bone. Reserve liquid. Take chicken and debone. Chop chicken into small portions. Place back into pot with broth,tomatoes, corn, garlic, onion and peppers. Simmer for 15 min to 30 min. Add more salt to taste. Serve with cornbread or shredded corn tortilla crisped in oil and drained.
